Not too long ago I was gifted an Instant Pot.  I have to admit, I was a little intimidated by it.  However; I knew I had to tackle that fear,  and I went just a little crazy looking for recipes!  There are so many recipes out there, so I set out to find the best Instant Pot Chicken Recipes around. Favorite Instant Pot Recipes for Chicken – one of my favorite things to do – share them with you!

Sandy at Simply Happy Foodie shared her Chicken Noodle Soup.  This is one of the first recipes I tried, and I know for sure you’ll want to give it a try!

Sandy also shared her recipe for Chicken Thighs & Potatoes.  As a girl who used to only use boneless, skinless chicken breasts, I have a newfound appreciation for chicken thighs.  The meat is so tender, and much tastier!  Who knew??  Everyone but me.  That’s who. Mandy at Huckleberry Life really kicks it out of the park with this recipe for Apricot Chicken.  What I love about her blog are the beautiful photos, and the step by step directions for her recipes.  It makes working with the Instant Pot so much less intimidating to me! Low Carb Buffalo Chicken Soup will soon be a favorite for my husband and I the nights that our son has a craving for salmon.  We like to spice it up a bit when he wants fish.  This recipe from Maya at Wholesome Yum is going to fit the bill perfectly!
