Lemon Blueberry Crunch Cake Trifles

There are two times of year where dessert reigns. Summer and the holidays. Summer desserts like my Lemon Blueberry Crunch Cake Individual Trifles hit just the right note after sharing a meal outside with friends during the summer.
Why they are so easy:
This recipe couldn’t get any easier. Everything is pre-made and can be picked up at the grocery store and assembled the morning of your party. When it’s hot out guests generally won’t look for a hot dessert – so this is the perfect summer entertaining recipe. You can make some adjustments, like making the pudding yourself, or using fresh whipped cream (which I would recommend if time isn’t an issue – or if you just love the taste like me), but the original recipe was given a thumbs up by my testers – so I’m giving it to you in its’ original form.
First – hit the grocery store. I went to Walmart and picked up a Lemon Blueberry Crunch Cake. They had different crunch cakes in different flavors – so feel free to change up this recipe (and share with us)! These are so tasty on their own – but as part of this trifle recipe they’re even better!
Additional items you’ll need:
One quart of strawberries
One pint of blueberries
Sugar
2 Naval Oranges
1 Package of 6 pre-made pudding cups
1 large Cool Whip Topping

Assembly
Assembly of the Lemon Blueberry Crunch Cake Trifle is super easy.
- Put a layer of pudding onto the bottom of the mason jar.
- Place a layer of the cubed cake.
- Layer of berries.
- Layer of whipped topping.
- Repeat the layers until you reach the top of the vessel you choose to use.
Notes from my testers:
- Make sure you serve this dish cold! I had to transport the dish to my testers, and it was super hot out. Even with ice packs, etc, it wasn’t as cold as it should have been. Chill up until the time you plan to serve it.
- They loved the individual mason jars that I served the trifle in. Some saved it until later, and had a treat for later in the evening. Others ate it right away.
- Use disposable utensils. One tester suggested that if you are transporting this dish away from home to attach disposable utensils. I think this is a fabulous idea! (I ended up bringing home dirty spoons).
- SAVE ROOM – every single one of the testers finished the entire jar. I was a happy lady.
Lemon Blueberry Crunch Cake Trifle
An easy, make-ahead dessert for summer or any time of year! This trifle will make you the star of the party!
- 1 Whole Lemon Blueberry Crunch Cake – Walmart
- 1 Quart Fresh Strawberries (Rinsed, diced)
- 1 Pint Fresh Blueberries (Rinshed, diced)
- 2 Large Naval Oranges (Zest and juice)
- 1 tbsp Zest from 1 of the Naval Oranges
- 1 pkg 6 cup package of pre-made vanilla pudding
- 1 large Pkg Whipped Topping
- 1/3 cup Sugar
- Rinse & dice berries & place in mixing bowl.
- Mix in sugar and orange zest
- Let berries macerate for up to one hour until there is juice.
- Cut the cake into cubes
- Put a layer of pudding onto the bottom of the mason jar.
- Layer of cubed cake.
- Layer of berries.
- Layer of whipped topping
- Repeat the layers until you reach the top of the vessel you choose to use.
- Chill for a minimum of one hour, and enjoy!!
