Easy Pasta Caprese Recipe

Last week I found myself in a situation where dinner literally needed to be sourced from my pantry and patio.  My husband was away on business, and my father-in-law was staying with us.  He’s not a picky eater, but I still wanted it to be something special.  I decided that my Easy Pasta Caprese Recipe was the perfect solution!

 

There are a few things I always have between my pantry and fridge.  Here’s what I grabbed for my recipe:

  • Organic spaghetti (you can use any type of pasta)
  • Olive Oil
  • Salt/Pepper/Garlic
  • Mozzarella Pearls
  • Fresh Parmesan

The additional items were straight from my patio picked from my little garden:

  • Grape tomatoes
  • Fresh Basil

This recipe couldn’t be simpler.  Dinner is on the table in literally under 15 minutes – and it’s super tasty! It’s good for company, and it’s great for an easy weeknight meal.  I could see putting this together for a lite summer meal for guests when I’m at the end of my hamburger and hot dog rope for summer.

 


 

 

I’m betting you don’t know the origin of a caprese salad or caprese pasta recipe, so I’ll share here what I’ve learned.  Shortly after World War I, someone who wanted to celebrate his Italian heritage decided to play tribute to Italy with this colorful combination.  The rest, as they say, is history.  You can read more about the history of this iconic dish here.

Regardless of the origins of this dish, it’s still really popular today, and for good reason.  The taste of fresh mozzarella, basil, and olive oil are wonderful, and take pasta from what is normally a heavier dish to a light enjoyable dinner.

So here’s how you do it!

Caprese Pasta

An easy weeknight meal that’s also good enough for company! Caprese Pasta will be a regular at your house!

  • 1 pound Spaghetti
  • 2 pints Cherry Tomatoes
  • 1/4 cup Olive Oil (extra virgin)
  • 1 tsp kosher salt (plus extra for pasta water)
  • 1 tsp Ground pepper (plus more to taste)
  • 1 bunch Fresh Basil (stems removed)
  • 1 tbsp Fresh Garlic
  • 1 pkg Mozzarella Pearls
  1. Boil water for pasta
  2. Heat olive oil
  3. Add cherry tomatoes
  4. Lower the heat to medium and simmer until tomatoes start to pop
  5. Add spices and stir. Turn the pan off.
  6. Cook pasta according to package directions
  7. Drain pasta and add to the pan with tomatoes.
  8. Stir in fresh basil and mozzarella pearls to heat slightly
  9. Serve & Enjoy!

Dinner can be super easy, fresh, & tasty in under 15 minutes – and the best part? You can easily use this recipe to entertain!
